Yakitori-Style Chicken Rice Bowl – Recipe – KTP Night
We had a Kitchen Table Passport Night and here are the results from ‘loosely’ following the recipe. I didn’t have a few of the ingredients and I may have skipped a few steps, if not done them completely different from what I was instructed to. Luckily, KTP took care of the most important part! They had all of the flavor and seasonings for the marinade and sauce taken care of for me. I basically mixed that packet of contents with what I had and made sure that everything was thoroughly cooked. This is what came out of the kitchen. It was delicious. Thank you, Kitchen Table Passport! Yes, we all used chopsticks (except for baby) because why not? More-so, because I felt like it would just go with our ‘discovery theme’. Yakitori-Style Chicken Rice Bowl Recipe – Kitchen Table Passport
2 cups of Jasmine rice
1/4 cup of low sodium soy sauce
1/2 cup of rice vinegar
3 tbsp of sugar *I used brown sugar and it was a bit more than 3 tbsp of it
2lb boneless, skinless chicken thighs *I used chicken breast
Japan herbs & spices packet (red chili pepper, sansho, black sesame seed, white sesame seed, hemp seed, ground ginger, roasted orange peel)
6oz snow peas * I only had sugar snap peas, so that’s what I used
1 bunch of green onions cut into 1 inch lengths *I didn’t have this and didn’t bother with it
oil *I used a mixture of olive oil and sesame oil
1. Make your yakitori sauce & prep the chicken
Combine the soy sauce, rice vinegar, sugar and half of your spice packet together – stir it well to ensure the sugar gets dissolved completely.
Cut your chicken into 1″ thick strips
Heat some oil in your pan/wok and fry the chicken for a few minutes until cooked.
Remove the chicken & put it to the side on a plate, then fry your onion & snow peas in some oil for a couple of minutes.
Add the chicken back in, and add the sauce – it should smell amazing *yes, it did as you heat the sauce with the chicken and vegetables. Cook for about 3 minutes.
3. Serve with plenty of sauce over a bed of rice
Sprinkle some more of your spice mix over it all.
